芋头酥

食材

油皮:中筋面粉150克、植物性无水奶油55克、白糖35克、水70克、盐一小勺

油酥:低筋面粉220克、植物性无水奶油85克

芋头馅:新鲜的芋头一颗,约600克、白糖100克

做法:1、油皮:将中筋面粉150克、植物性无水奶油55克、白糖35克、水70克、盐一小勺,全部倒进空碗里,和在一起,将面团揉至光滑,再盖上盖子,避免水分流失,静置30分钟。

     2、油酥:将低筋面粉220克、植物性无水奶油85克,全部倒在空碗里,将这两样食材充分和均匀,盖上盖子。

     3、芋头馅:首先将芋头对半切,去皮,冲洗干净,再切成块状,放到电饭锅里蒸30分钟(外锅放一杯水,内锅千万不要加水)将蒸好的芋头块捣成泥状,加入100克的白糖,将白糖和芋泥和均匀,把它分成20等份,每份大约30克。

     4、将静置好的油皮和油酥分成10等份,因为等一下还要对切成两份。

     5、将油酥包裹在油皮里,放在面板上,用擀面杖擀平,长度大约15公分,将皮由下往上卷起,此动作共要做两次。再用刀将它对切成两等份,用手稍微压一下,再用擀面杖擀平,最后将芋泥完全包裹在油皮里。

     6、将包好的芋头酥放到烤盘上,烤箱必须先设定在180度,预热10分钟,烤20分钟就可以了。

温馨提示:

     1、饼皮香酥可口,内陷又有浓浓的芋头香,而且甜而不腻,真是爽口!

     2、和油皮时加点紫甘蓝汁。
