我们吃太多肉了吗?

    休斯敦航道被牛肉脂肪堵塞了,不像在水面带有多彩光泽的石油,牛肉脂肪变成一块实心饼,看起来像条蜡状冰流。

  这里有个教训,要深刻领会的含义是,动物脂肪在室温下是固体,并且这就是装满了饱和脂肪(“坏”脂肪)的标志,因为它使你的胆固醇升高并且增高动脉堵塞的风险。

  当我小时候在北达科他州成长时,我母亲烧熏肉给她的五个孩子吃,烧熟后,她把热腾腾的熏肉条从锅里拿出来放在一张纸巾上把油吸走,然后她小心地把锅拿起来把热腾腾的油脂倒入罐里,留着以后用。但她没有把这罐熏肉油脂存在冰箱里;她只是把它放在橱柜里。她知道当这罐油脂凉下来时,它会形成蜡状固体。第二天,她用勺子拿一些熏肉油脂放到锅里来煎鸡蛋。她的孩子们能活到成年期是令人惊讶的,但那就是我们的饮食方式直到我们后来了解更多。

  普通的美国人每年食用200磅的肉食,33磅的奶酪,还有接近60磅的添加脂肪和油。食用一份油腻餐后几分钟,动脉血管变得更硬,血液变得更粘,并且我们的身体有点像个小规模的休斯敦航道。

  这状况并不是一直如此,目前的肉类摄取量比一个世纪前农业部刚开始做记录时多出75磅,奶酪摄取量已增加了接近30磅,添加的油也增加了。原因是:

  可支配收入的增加。我们比过去要有更多钱花费在食物上,事实上这是占有史以来总支出最小的一部分。

  外出就餐。尤其是快餐和比萨连锁餐厅的出现,它们强调肉食、奶酪和油炸食品,我们的餐碟有丰盛的油脂,我们有接近一半的膳食是在家外食用的。

  政府的方案。给肉类和奶酪生产的补贴减低了提供快餐和比萨的成本,并且社区计划把这些食品送往学校和医院。

  作为一个医生,让我鼓励我们所有人牢固地记住那漂浮脂肪的影像,如果它使我们在饮食中控制肉食量,我们的状况将变得更好。
