    年夜饭要热闹也不能太清淡,咱们都吃素了偶尔来个油炸的也无碍~杏鲍菇的口感很适合这样做,炸出来外壳酥香,内里有口感,味道上又用了重口味,红红火火的感觉

    原料杏鲍菇 2-3个

  调料:面粉、干辣椒 1大匙、花椒 1大匙、盐 +1/2小匙、糖 1/2小匙、生抽1小匙、冰水

    做法:

  1.杏鲍菇切滚刀块,干辣椒切小段待用。

  2.用面粉和冰水加1/2小匙盐调成面糊, 稠度以用筷子蘸下,糊均匀裹在上面不会滴下为宜。

  3.杏鲍菇蘸上面糊,入九成热(180度)的油锅中炸至金黄,捞出控油待用。

    4.另起锅下少许油,先下花椒小火炒香,再下干辣椒和杏鲍菇略翻炒,接着加盐、糖和生抽调味即可

  小贴士:

  1.为什么要用冰水拌面糊,因为冰和热油产生的温差大,所以炸出来的口感更脆,就像塑料盆子冬天放在室外会碎掉一样,都变脆了。

  另外,冰水和油之间有面粉作为介质,这样炸起来没关系,如果不小心直接把冰水倒进热油锅里会产生爆炸效果,所以一定要小心

  2.很多新手不理解油温的几成热是什么意思,油的沸点是200度,几成热就是20*几~

  3.最后炒花椒和干辣椒时一定要小火,否则很容易黑掉

  4.面糊的量自己掌握,建议先用半碗面粉调糊,准备炸的时候再加水调,水慢慢加,不要过度搅拌,有点面疙瘩什么的都不要紧,搅拌过度了会促进面粉里的面筋质产生,这样就不脆了
